Our Bio-Leben brown rundgrain rice is an unpolished organic rice. Polished rice has its uppermost dark layer removed (peeled off), then the rice is polished again several times (milled). During this procedure fibre, vitamins and minerals are lost. In brown, unpolished rice, however, they are retained.
From a nutritional point of view, brown rice is highly recommended. Brown rice has to be cooked a little longer, but the cooking time can be reduced by soaking the rice beforehand (see below).
Rice (oryza sativa) is one of the seven most important types of cereal, and a highly important staple food worldwide. In contrast to other types of cereal rice does not contain gluten. For this reason it is often eaten in a low-gluten or gluten-free diet. It is used in many gluten-free products, for example in our Bio-Leben crunchy rice bread.
Our organic brown rundgrain rice can be used in rice balls, salads, side dishes, soups, vegetable and meat fillings and many other savoury, vegetarian, vegan and sweet foods.
Cooking Instructions:
Boil 2 cupfuls of water. Add a cup of washed organic brown rundgrain rice and salt to taste. Bring to the boil again and simmer for 45 minutes on a medium heat. Stir the rice around a little with a fork and carrying on simmering until the liquid has evaporated. Add some butter, or oil (for example, one of our Bio-Leben oils – peanut, sesame or thistle oil), parsley, Bio-Leben Sicilian pine kernels, organic raisins (from our organic brand “Pearls of Samarkand”) or enjoy the rice on its own.
Tip: the cooking time can be halved if you soak the rice overnight (or the whole day if you want to prepare the rice in the evening).

Baked Rice Pudding – vegetarian style
Place 150g Bio-Leben brown rundgrain rice in 1 litre of milk and boil the rice on a low heat until it is quite soft. Add 70-100 g cane sugar (to taste), 1 packet vanilla sugar, the peel of half an untreated lemon (organic), a pinch of cinnamon and 1 tablespoon of cornstarch (mixed with a little milk). Mix all the ingredients and simmer for a further 5 minutes, until they are of a creamy consistency. Finally, place the rice pudding ingredients into a small ovenproof dish and bake on a medium heat for 20-30 minutes. Serve the baked rice pudding well cooled, warm, on its own or with compote of your choice (for example, apple sauce). You’ll enjoy this rice dish!
