You may wonder how the chickpea got its name – in fact, it has nothing to do with chicks! The chickpea is really a “pea-pea”, for the word “chick” in this case is derived from the Latin word “cicer”, meaning pea.
Chickpeas are rich in protein, magnesium and iron. Their high protein content makes them particularly suitable for those who consume only small amounts of animal-derived foodstuffs, or none at all (for example, vegetarians and vegans).
Chickpeas are slightly nutty in taste. Use them in delicious salads, side dishes, soups, stews, purées and other savoury, vegetarian (vegan) dishes. Couscous with vegetables and chickpeas is one of the best-known of these.
Cooking Instructions:
Take the required amount of chickpeas and soak them overnight in plenty of water. Cook them for around 1 hour. When cooked, the chickpeas have a slightly crunchy texture.
You can fry the cooked chickpeas in a pan, together with a little oil.

Hummus (Chickpea Purée) – vegetarian and vegan!
Soak 330g of Bio-Leben chickpeas (1 packet) overnight in plenty of cold water. Cook the chickpeas for at least 1 hour until they are quite soft. Pour off most of the cooking water, but put some of it aside for later. Mash the cooked chickpeas thoroughly with 50g peeled Bio-Leben sesame. Keep adding cooking water until the mixture is nice and creamy. Season with salt, paprika powder and 2-3 crushed cloves of garlic. Place the purée in a shallow bowl and drizzle with 3-4 tablespoons of Bio Leben olive oil (mixed with 1 teaspoon paprika power).
Serve the hummus preferably with flat bread or meatballs. Enjoy your meal!
