Lentils have been grown for a very long time in Austria, but they’ve been rather neglected in recent decades. We decided to change that, and pioneered the first organic beluga lentil growing project in Austria! The beluga lentil is special, being small, black, shiny and particularly aromatic.
Our Bio-Leben beluga lentils are a quality Austrian product and their cultivation helps to support Austrian farmers.
Beluga lentils are very similar in shape and colour to beluga caviar, hence the name.
Lentils provide healthy nutrition and are an absolute must for anyone leading a healthy lifestyle. They contain high levels of protein and carbohydrates, and have very low amounts of fat (2,1g). Their high protein content makes them highly recommendable for vegetarian or vegan nutrition.
Use our organic beluga lentils for delicious salads, side dishes, soups, vegetable and meat fillings and many other savoury, vegetarian (vegan) dishes.
Cooking Instructions:
Put our beluga lentils into a pan of water using 1 part lentils to 2,5 parts water. Cook the lentils for 15-20 minutes. Check to see if the lentils are of the required consistency, and cook them for a little longer if necessary. Beluga lentils are firm to the bite even after cooking and do not disintegrate during cooking. Drain the lentils and throw away the cooking water. If the beluga lentils lose some of their colour after cooking, this is related to harvesting, and is perfectly normal.

Our Recipe Tip:
Beluga Lentils With Vegetables, Ginger And Lemon Grass – vegetarian and vegan!
Cook the beluga lentils (200g) as described above. Take some of your favourite vegetables (according to season), for example, leeks, carrots, bell pepper, courgettes, and a large onion and cut them into thin strips. Cut a small piece of ginger and 3-4 stems of lemon grass into small pieces. Fry the vegetables in a wok (or large pan) in some Bio-Leben sesame oil. Add vegetable stock, the ginger and a can of coconut milk. Simmer the ingredients. Finally add the lemon grass and the beluga lentils, and season with curry, pepper, coriander, paprika and if preferred, salt.
